Sweet Potato Souffle


Sweet Potato Pie:
3-4 cups cooked and mashed sweet potato
1/2 cup sugar
1/4 cup milk
1/3 cup melted butter
1 teaspoon vanilla
2 eggs beaten
Mix all ingredients in a bowl and put in a baking dish that has been greased.

Coconut, pecan topping:
1 cup shredded coconut (I buy mine in a bag at the store).
1 cup brown sugar (I only use about 2/3 - 3/4 cup).
1/2 cup flour
1/2 cup butter (melted).
1 cup pecans (chopped).
Mix all ingredients together in a bowl and top upon sweet potato mixture.

Bake at 375 for approx 30 min.
